For me, despite the rain, being able to pick a glut of Sicilian lemons fresh from my tree filled me with joy and gratitude 🍋
They aren’t “picture perfect” specimens, but that is what I love about them – lumpy bits, odd shapes, and all. I personally think that it is their diverse uniqueness that makes each lemon delicious on their own, and magnificent working their flavour magic together in meals. 🍋🍋
Right now, I am enjoying a hot cup of fresh lemon, ginger, and mint tea 🍋🫚🫖 – pure bliss
Over the next couple of days, I think I’ll use them to make:
🍋 Cornish ginger and lemon fairling biscuits (it’s an old 1800s recipe from Cornwell, UK)
🍋 Zesty lemon, mint, and peas omelette for breakfast
🍋 Creamy lemon and salmon pasta bake
🍋 Preserved lemons – with sea salt, peppercorns, cinnamon sticks, mustard seeds, cloves, and a few other spices
🍋 Zesty lemon spaghetti
🍋 Lemon chicken and broccolini
🍋 Lemon drizzle cake
And there is still a tree full of lemons waiting to be picked!!
