
Lunch today has made me think of this action from last month’s Action for Happiness calendar.
What’s everyone having for lunch?
I’ve just made myself a lemon marinated smoked salmon potato salad with grilled tomatoes, green beans, leek, zuchinni, pickled carrot, broccoli & dill.
The lemon was my preserved lemons from my tree using a UK National Trust recipe. Washed down with a refreshing cup of Melissa (lemon balm) for immune boost. 😋😋
This is giving me a much needed mood boost on a Friday afternoon to help focus on my work and studies.
